This is for the soup lover - spicy and sweet at the same time! Great taste.

  • 7 slices of chopped bacon
  • 1 lg. butternut squash
  • 1 lg. onion, chopped
  • 1 1/2 Tbs. chopped fresh thyme
  • 2-3 Tbs. Marsala wine
  • Pinch of cayenne pepper
  • Salt and pepper to taste
  • 5 C. chicken broth (can use more if necessary)

Cut squash into pieces and cook in the microwave for 13 minutes or however you prefer. In pan, cook 5 pieces of bacon (chopped until soft). Add onion and thyme and cook until soft. Add squash, chicken broth, cayenne peppper, wine, salt and pepper and cook for 20 minutes. Let cool and put in blender, use liquefy or puree to make the soup smooth. Cook rest of bacon in microwave to top the soup.

  • Oh how this brings back memories for me. I love to cook with Marsala, but can no longer afford it...... now I just use white wine.
