Grease a 4-qt. crockpot. In a bowl, mix the sugar, brown sugar, cinnamon, nutmeg, and ginger together. Sprinkle 2 Tbs. sugar mixture into the bottom of the greased crockpot. Set the remaining mixture aside.

Cut each biscuit into 4 pieces. Put the biscuits and apple pieces into the bowl with the sugar mixture. Toss them to coat completely. Put the mixture into the crockpot and sprinkle with any remaining sugar mixture from the bowl.

In another bowl, combine the butter, apple cider, and vanilla. Pour it over the biscuits in the crockpot. Cover and cook on high for 2 to 2 1/2 hours. Carefully remove the lid so that the condensation doesn't fall on the bread. Cover the top with paper towels and put the lid on top. Cool for 10 to 15 minutes. Carefully remove the bread from the crockpot and move it to a platter. Spoon any liquid from the crockpot over the bread. Serve warm.
