  • 1 C. graham cracker crumbs
  • ¾ C. + 2 T. sugar
  • 3 T. butter, melted
  • 3 (8 oz.) packages cream cheese, softened
  • 1 tsp. vanilla extract
  • 3 eggs
  • Blueberry jam, preserves, or fresh berries

Preheat oven to 325 degrees. In a bowl, combine graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Pack into the bottom of muffin liners or oven-safe ramekins. In a large bowl, use a mixer to beat together cream cheese, remaining sugar, and vanilla until smooth and creamy. Mix in eggs until well incorporated and pour mixture over graham cracker crusts. Bake for 20 to 30 minutes until center is set, let cool, and refrigerate for at least 2 hours. Top with blueberry jam or fresh berries.
