  • 2 C. quinoa flour
  • 1 tsp. baking soda
  • Dash salt
  • 1 ¼ C. brown sugar
  • ½ C. coconut oil, melted
  • 1 egg + 1 yolk
  • 2 tsp. vanilla extract
  • 1 C. semisweet chocolate chips

In a bowl, combine quinoa flour, baking soda, and salt; set aside. In a large bowl, beat together coconut oil and brown sugar with an electric mixer. Once smooth, add in egg, egg yolk, and vanilla; beat until creamy. Stir in flour mixture and gently fold in chocolate chips. Roll dough into 1 inch balls and place along a baking sheet lined with parchment paper. Bake at 350 degrees for 8 to 10 minutes until golden brown. Transfer to a cooling rack to set up.
