Amp up your regular grilled cheese and add some pepperoni! The pizza-like sandwich is perfectly browned and super melty!

  • 4 slices sourdough bread
  • 12 slices of fresh mozzarella cheese, thin
  • 8 oz. pepperoni, thinly sliced
  • ½ C. marinara, for dipping
  • ½ C. spinach
  • 4 slices of thick cut bacon
  • Butter, for cooking

Grease a large skillet with butter on medium-high. Toast the bread on both sides (make sure butter gets on both sides of the bread). Cook the bacon in the skillet, once it’s done, saute the spinach. Split the cheese, bacon, spinach and about 1 Tbs. of the marinara between the two sandwiches. Reheat the sandwiches once they’re formed and continue to cook until the cheese melts (lower the heat for this and cover the skillet so the cheese melts without burning the bread).
