Goosey Chicken
Ingredients
- 4 chicken breast halves, trimmed
- 1 egg
- 1 C. ricotta or cottage cheese
- 1/4 C. parmesan or asiago cheese, shredded
- 1/2 tsp. nutmeg
- 1 10-oz. pkg. chopped spinach, thawed and squeezed dry
- salt & pepper
- butter or olive oil flavored cooking spray
- orange marmalade or cherry jelly (if desired)
Directions
Pre heat oven to 350 degrees. Rinse and pat the chicken dry. Lay the chicken breasts on a cutting board and with a sharp knife, held parallel to the cutting board, carefully cut a deep pocket into the side of the thickest part. Be careful not to cut all the way through. In a bowl beat the egg thoroughly then add the cheeses, nutmeg, salt and pepper. Mix thoroughly and add the spinach, again mixing thoroughly.
Stuff the cheese mixture into the pocket you have cut in the breast. You can pack it pretty full but divide it evenly between the breasts. Spray cookie sheet with spray and place the breasts on the sheet. Spray the breasts with the spray and sprinkle with the pepper. Bake at 350 degrees for 30 minutes or until juices run clear. You can glaze the breasts with cherry jelly or orange marmalade. When the juices run clear place 1 Tbs. Jelly on each breast and bake for 5 more minutes.
