  • 1 ½ C. chicken broth
  • 3 T. butter
  • ½ tsp. salt
  • 3 garlic gloves, minced
  • 2 tsp. apple cider vinegar
  • ½ tsp. dried parsley
  • ¼ tsp. pepper
  • 1 honey crisp apple, chopped
  • ¼ tsp. dried oregano
  • 1 ½ C. apple juice
  • 1 T. Dijon mustard
  • ¼ tsp. dried thyme
  • 1 bay leaf
  • 1 C. wild rice
  • ½ onion, diced
  • ½ C. dried cranberries
  • ½ C. chopped pecans, toasted

In a saucepan, add the apple juice, mustard, butter, salt, pepper, oregano, thyme, parsley, bay leaf and rice. Let is simmer for 45-50 minutes. Most of the liquid should be absorbed, but drain any remaining liquid. In an empty pan, melt butter and add the onions and apples so they can sauté. Add in the garlic. Combine the rice and the new mixture. Add in the cranberries, pecans and apple cider vinegar. Toss and serve.
