  • 2 sm. heads lettuce
  • 1/4 C. virgin olive oil
  • 1 Tbs. red wine vinegar
  • 1 pinch salt
  • 1 pinch pepper
  • 4 oz. Gorgonzola, rind removed and crumbled
  • 1/2 C. walnuts, toasted and chopped

Wash lettuce and dry. Tear greens into bite-size pieces. Whisk oil, vinegar, salt and pepper together. Pour dressing over salad until well-coated. Add cheese and walnuts. Toss again. Serve.
