  • 2/3 C. dark brown sugar
  • 2 T. butter
  • 2 T. dark corn syrup
  • 1 1/2 C. 2% milk
  • 1/2 C. egg beaters
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/8 tsp. orange zest
  • 2 Lg. eggs
  • 6 slices French bread
  • 2 tablespoons finely chopped pecans toasted evenly
  • 1 C. blueberry preserves
  • 2 C. Maple syrup

Combine brown sugar, butter and corn syrup in a pot over medium heat. Cook for five minutes or until sugar dissolves, stir constantly. Pour sugar mixture into bottom of a 13 x 9-inch baking dish coated with cooking spray. Spread mixture evenly over bottom of pan. Set aside; to cool. Whisk milk, egg beaters, eggs, vanilla, salt, orange zest in a large bowl. Dip bread slice one at a time, in egg wash mixture. Arrange bread over sugar mixture in dish. Repeat procedure with remaining bread slices. Pour remaining egg mixture over bread slices. Cover and refrigerate overnight. Preheat oven to 350°F. Bake at 350° for 30 minutes or until lightly brown. In a saucepan over medium heat combine blueberry preserves and syrup; stir occasionally.Top with one teaspoon of pecans and syrup reduction.
