Gourmet Mushroom Alfredo Fettuccine

- 1 lb. fettuccine pasta
- 1 T. olive oil
- 1/2 C. diced onion
- 1/2 T. minced garlic
- 2 pt. thinly sliced cremini mushrooms
- 1 C. milk
- 1/2 C. grated Asiago cheese
Cook the pasta according to package direction, then drain and set aside.
In a pot over medium heat, heat the oil, onion and garlic, cooking for about 5 minutes. Add the mushrooms to the pot, and season with salt and pepper. Stir frequently and cook for about 10 minutes, then add the milk. Bring the mixture to a simmer. Stir in the cheese. Serve over the fettuccine pasta.
