Instead of serving chili in a bowl, add a new spin on it by serving it in a carved out squash. Still the same great taste of chili, just in a new bowl.

  • 2 lb. lean ground beef
  • 1/3 C. chili seasoning mix
  • 2 (14.5 oz.) cans diced tomatoes with green pepper, celery, and onion
  • 2 (8 oz.) cans tomato sauce
  • 1 16 oz. can black beans, undrained
  • 1 15.5 oz. can small red beans, undrained
  • 1 package shredded mozzarella cheese
  • 4 squashes, cut in half and inside removed

Brown beef in a pan or skillet over a medium-high heat, stirring often for 4 to 5 minutes or until beef crumbles and is no longer pink. Drain. Return beef to pan and sprinkle evenly with seasoning mix and sauté for 1 minute over medium-high heat. Stir in diced tomatoes and remaining ingredients except cheese and squash. Bring to a boil over medium-high heat, stirring occasionally. Cover, reduce heat to low, and simmer for 15 minutes, stirring occasionally. Once cooked, scoop out chili into hollowed out squash and sprinkle mozzarella cheese on top. Place on a baking a sheet and broil in the oven until cheese melts and is slightly brown. Remove and serve.
