Ingredients

  • 2 large squash
  • 1 ½ C. uncooked quinoa
  • 1 lb. leeks
  • ¼ C. sage
  • ¼ C. thyme
  • ½ C. walnuts
  • 3½ tsp. olive oil
  • 1 tsp. salt
  • Pepper

Directions

Preheat the oven to 425 degrees. Cut each squash in half and spoon out the seeds. Drizzle olive oil on each half. Sprinkle salt and pepper. Place them into a baking sheet. Bake for 35 minutes. Cook the quinoa as instructed on the package. Cut up the leeks and sauté them. Add in the thyme, chopped sage and walnuts. When the quinoa is ready add in the sautéed mixture. Stuff the baked squash with the quinoa mixture. Serve and enjoy.
