Grandma's Apple Cake

This recipe has been passed down through our family for at least the last 60 years that I am aware of. It is very easy to prepare and absolutely delicious! We fix it a lot when we get apples every year from the "pick your own" ranches near us.

Ingredients

  • 2 C. diced raw apples (we like Granny Smiths, Pipins, or Washington Red apples)
  • 1/4 C. vegetable oil
  • 1 egg
  • 1 C. sugar
  • 1 C. flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 C. chopped nuts (walnuts or pecans work best)

Directions

Combine the apples, oil, egg, and sugar. Mix well. Sift together the flour, salt, baking soda, and cinnamon. Combine the dry and wet ingredients together, add the chopped nuts. Pour batter into a greased and floured oblong cake pan. Bake at 350 degrees for 1 hour. Frost with your favorite butter or cream cheese icing or simple vanilla cake glaze. Or serve the cake warm as is with a dab of whipped cream or a scoop of vanilla ice cream.
