  • 1 box of gingerbread cafe mix
  • 1/4 C. powdered sugar
  • 2 8-oz. packages cream cheese
  • 2 tsp. vanilla extract
  • 2 C. whipped cream
  • 1/2 C. dark coffee
  • 1 Tbs. ground cinnamon

Preheat oven to 350 degrees. Prepare cake batter according to box directions and then pour into non-stick 10-by-15 inch pan. Bake for 20-25 minutes. In a large mixing bowl, combine sugar, cream cheese and vanilla with electric mixer. Add whipped cream. Cut cake in half and then lengthwise into strips. On a baking dish, place half of cake strips for the first layer. Spread mixture for next layer. Add remaining cake strips and top with mixture. Sprinkle with cinnamon. Cover. Refrigerate overnight.
