  • 3 large sweet potatoes, chopped
  • 3 large eggs
  • 1 tablespoon of salt
  • 2 tablespoons of lemon, squeezed juice
  • 3 tablespoons of light corn starch (or honey)
  • 2 tablespoons of vanilla extract
  • 1 tablespoon of cinnamon
  • 1 cup of sugar
  • ¼ cup of all-purpose flour
  • 1 ¼ cup of melted butter
  • ½ cup of evaporated milk
  • Store-bought pie crust

Preheat the oven at 350F.
In a large pot, boil 3 large sweet potatoes for 1 hour in medium meat. When the sweet potatoes are tender, drain the excess water and let them cool for 20 minutes.
When the sweet potatoes are cooled down, peel the skin and place them in a large mixing bowl. Using a masher, smash the sweet potatoes. Be sure to remove the strings
In the same mixing bowl, combine the eggs, salt, lemon juice, light corn starch, vanilla extract, cinnamon, sugar, flour, melted butter, and evaporated milk with the mashed sweet potatoes using an electric mixer. Blend this mixture for 5 minutes
In a 9inch pie crust pan, gently place the store-bought pie crust. For a thicker crust, place two pie crusts. Add the sweet potato pie mixture into the pan. Bake for 45-55 minutes.
When the sweet potato pie is fully baked, let it sit for 1 hour, then place it in the refrigerator for 2 hours before eating.
