Granny's Yam Casserole

This sweet take on sweet potatoes brings wonderful memories of holiday dinners at Granny's house. The gooey marshmallows with the crunchy pecans and bananas add such a wonderful blend of favors to satisfy your taste buds for holidays or anytime you wish.

  • 4-5 sweet potatoes baked
  • 1/2 stick butter
  • 2 C. carmalized pecans
  • 4 bananas
  • 1/2 C. mini marshmallows

Preheat oven to 350 degrees.

Peel sweet potatoes and place into a bowl, add butter and mash with mixer until smooth. Grease a 2 quart casserole and layer half of the sweet potatoes, 1 C. of the pecans and 2 bananas sliced. Repeat layers again and add marshmallows on top. Bake until marshmallows are browned, about 10 minutes.
