A quick appetizer that uses fresh ingredients for an overall impressive presentation.

Ingredients

  • 2 large tomatoes
  • 1 loaf Italian bread
  • 3-4 leaves fresh basil, chopped
  • 1 clove garlic, chopped
  • 1/4 C. onion, chopped
  • 1-2 Tbs. olive oil
  • Salt and pepper to taste
  • Parmesan cheese

Directions

Seed and dice tomatoes and place in a bowl. Add basil, garlic, onion, olive oil and salt and pepper to taste.

Cut bread into slices 1/2-inch thick. Drizzle grill pan with olive oil. Place slices on pan, turning each piece of bread to make sure both sides have oil. Toast bread over medium heat until both sides are golden brown. If you don't have a grill pan, this can be done in the toaster oven.

Top each slice of bread with a spoonful of the tomato mixture. Using a vegetable peeler, shave long curls of parmesan and top each bread slice with a curl.

  • I'm always amused when folks get uptight about wording of a recipe. All you need to know is what the ingredients are; each one will "design" it the way he wants it, anyway!! Chill out!

  • Tell it like it is, msglass. I have seen the larger curls on occassion over the years and yes, it gives it a definite bolder attitude. I'm not much impressed by self's-worst critics that never the less make a substantial effort to blow own horrns. It always lends a false feeling for the value of the comments.

  • george - I happen to think this dish looks very appetizing. I've never had a bruschetta where the cheese was melted and I thought the larger curls of parmesan gave it a different look rather than grated. To each his own, but I hope others won't be discouraged - it's delicious!

  • I normally dont write negative things. but I would be my own worst critic, It looks like you just slooped the stuff together. people eat with their eyes, you have to make it appealing. Soory you could have done better. I am a chef,I've worked at a few places. melt the cheese next time
