Great Carrot Cake

Ingredients
- 1 C. cooking oil
- 2 C. granulated sugar
- 4 eggs
- 2 C. sifted all-purpose flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 C. grated carrots
- 1 C. chopped pecans or walnuts
- 1 C. raisins (optional)
Directions
Preheat oven to 300 degrees. Beat together oil, sugar, and eggs. Blend flour, baking soda, baking powder, salt, cinnamon, and nutmeg into the egg mixture well. Mix in carrots, pecans, and raisins well with a spoon. Pour into greased and floured bundt or sheet cake pan (9x13") Bake at 300 degrees for 1 hour. Test for doneness. Let cool and frost with cream cheese icing.
