  • 8 T. unsalted butter
  • ¼ tsp. salt
  • ½ C. milk
  • 1 tsp. vanilla extract
  • 1 C. sugar
  • ½ tsp. ground cinnamon
  • ¼ C. cranberries
  • 1 ¼ C. flour
  • 1 ½ tsp. baking powder
  • 1 egg

Preheat the oven to 350 degrees. Grease a cake pan with butter. Set it aside. In a bowl mix together the ½ C. of sugar and cinnamon. Spread this mixture at the bottom of the cake pan. Add in the cranberries. In an electric mixer, add the cream, butter, sugar, egg and vanilla. Mix until it becomes fluffy. In a separate bowl, mix the flour, baking powder and salt. Combine both mixtures. Spread the batter into the pan. Bake the cake for 30-40 minutes. Let it cool for 20 minutes. Run a knife around the edge of the cake. Invert onto a platter. Serve and enjoy!
