Great Depression Cake

No matter what your economic circumstances, this cake will cheer you up!

Ingredients

  • Wet ingredients:
  • 1 apple, peeled and grated
  • 2 C. raisins,
  • 2 C. brewed coffee,
  • 2 C. sugar
  • 1/2 C. shortening
  • Dry ingredients:
  • 2 C. flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. each of nutmeg, all spice, cloves and cinnamon
  • 1 C. pecans or walnuts

Directions

Simmer the wet ingredients for 10 minutes. Combine the dry ingredients. Remove the pot from stove and let cool for 10 minutes. Place dry ingredients in a bowl, pour in cooked mixture. Mix ingredients together until it forms into a cake batter. Pour into a well-greased 9 x 13 pan. Bake for 25 minutes at 350 degrees. To check if cake is done, place a toothpick in center.

  • Actually this is not all that bad -- it has too much sugar, and no eggs -- but not so strange otherwise.
    Now, somehow you missed what was REALLY bad. Pinto Bean Cake. Yes. It smelled really bad, too. Will leave it at that --
