Great Greek Spinach Pie
Ingredients
- 2 boxes frozen spinach, thawed and squeezed dry
- 2 eggs, beaten
- 1 sm. shallot, minced
- 1 6-oz. pkg. feta cheese
- 3 grinds black pepper
- 12 sheets phyllo, defrosted
- 1 C. butter or margarine, melted or butter flavored cooking spray +
- 2 Tbs. butter or margarine
Directions
Sauté shallot in 2 Tbs butter and then cool. Add all ingredients except 1 cup butter/spray and mix well. Lay out phyllo on cutting board and brush butter (or spray) between 6 layers of phyllo. Lay prepared phyllo into rectangular baking dish. Add spinach mixture, pat down and continue with phyllo, brushing butter between remaining 6 layers of phyllo. Finish with butter on top phyllo. Bake at 350 degrees for about 25-35 minutes (depending on your oven). Let side about 10 minutes before serving.
