  • 2 English cucumbers, peeled, seeded and diced very fine
  • ¼ C red onion, diced fine
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp lemon zest
  • 4 tbsp fresh mint, chopped
  • 4 tbsp. Fresh Dill, chopped
  • 3 C plain Greek Yogurt
  • ½-1 C water
  • 1 tsp salt

To make this authentic Greek soup, begin by add the Greek yogurt into a large bowl.  Then add the salt, lemon juice and lemon zest.  Peal and slice the cucumbers lengthwise and scoop out the seeds.  discard the seeds and finely dice the cucumber.  Add everything into the bowl of Greek yogurt.  Then thinly slice and chop the red onion and garlic.  Wash the herbs and chop the mint and dill.  Combine everything into a bowl and combine until thoroughly mixed and all the cucumber are coated.  Allow this mixture to sit for about 15-20 minutes.  Then add the water so that you get a desired consistency.  Chill in the refrigerator for 20 minutes.  Garnish with slices of extra cucumber and enjoy.
