Grecian Broccoli with Rice

Ingredients
- 1 C. uncooked rice
- 2 Tbs. olive oil
- 4 garlic cloves, minced
- 2 medium tomatoes, cored, seeded, and diced
- 1 bunch broccoli, cut into florets (about 5 cups)
- 1/2 tsp. dried oregano
- 1/4 C. water
- 5 oz. feta cheese, crumbled
- freshly ground pepper, to taste
Directions
Cook rice according to package directions. Heat olive oil in a large skillet. Saute garlic for 2 minutes. Add tomatoes and saute for 2 minutes. Add broccoli and oregano and toss. Pour in water and cover. Cook for 5 minutes. Stir in hot rice, feta cheese, and pepper to taste.
