Grecian Broccoli with Rice

  • 1 C. uncooked rice
  • 2 Tbs. olive oil
  • 4 garlic cloves, minced
  • 2 medium tomatoes, cored, seeded, and diced
  • 1 bunch broccoli, cut into florets (about 5 cups)
  • 1/2 tsp. dried oregano
  • 1/4 C. water
  • 5 oz. feta cheese, crumbled
  • freshly ground pepper, to taste

Cook rice according to package directions.  Heat olive oil in a large skillet.  Saute garlic for 2 minutes.  Add tomatoes and saute for 2 minutes.  Add broccoli and oregano and toss.  Pour in water and cover.  Cook for 5 minutes. Stir in hot rice, feta cheese, and pepper to taste.

Serve with: Greek Roasted Chicken and Potatoes
