  • 1 tbsp olive oil
  • 4-5 chicken breast halves with skin and bones
  • 3/4 C canned low-salt chicken broth
  • 1 tbsp fresh lemon juice
  • 1 tsp grated lemon peel
  • 1/4 tsp dried crushed red pepper flacks
  • 3 tbsp chopped fresh oregano
  • 1 chopped onion
  • 2 chopped red pepper
  • 2 chopped yellow pepper
  • 1 sliced large rib celery
  • 1/2 C black olives

Heat oil in heavy large skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add to skillet and for about 10 minutes sauté the chicken until browned. Add broth, lemon juice, peel, and crushed pepper. Reduce heat and cover.  Simmer until chicken is cooked through, about 15 minutes. Uncover and add veggies and 2 tablespoons oregano. Sauté altogether. Season with salt and pepper; serve.
