Ingredients
- 4 dry onions
- 6 potatoes
- 6 zucchinis
- 1 green pepper
- 4 med. eggplants
- 1/2 bunch parsley
- 2 carrots
- 1 Tbs. mint
- 1 Tbs. oregano
- 5 garlic cloves
- salt
- pepper
- 1/2 C. mashed tomatoes and tomato sauce
- 1 C. vegetable oil or olive oil
- 1 C. water
Directions
Cut all vegetable ingredients in sliced. Place in bowl. Add oregano, garlic, salt, pepper, oil and water. Place in pan. Cover with aluminum and bake for 2 hours. Remove aluminum when vegetables are done and continue baking at 350 degrees in oven, about 15 minutes until brown.
Serve with: Hot and Spicy Chicken
