  • 8 boneless skinless chicken thighs
  • ½ cup flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 chopped onion
  • 4 minced cloves garlic
  • ½ tablespoon oregano
  • 1 ½ cups orzo
  • 1 cup white wine
  • 2 cups chicken broth
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped parsley
  • 1 ½ cup mushrooms
  • Salt and pepper to taste

Whisk together the flour, paprika, garlic powder, and a dash of salt and pepper. Coat the chicken in the flour mixture. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and then add the chicken thighs. Cook for 4 minutes on each side. Set aside the chicken and use the same skillet to heat the remaining oil. Add the garlic, oregano, mushrooms, and onion. Cook for a minute before adding the orzo. Pour in the chicken broth and wine and stir. Bring the skillet to a boil and reduce the heat. With the heat at medium, add the chicken again and cover the skillet. Cook for 10 minutes. Garnish with parsley and feta cheese.
