When we think of Greece, we immediately think of gyros. Yes of course we can relate to the beautiful islands and hot weather, but the savory flavor of gyros make us want to book our next ticket. However, you don't have to pay money to have a taste of the gorgeous Island. This simple savory recipe will be making you sing "OPA".

  • 1/3 C. extra-virgin olive oil
  • 4 cloves garlic (minced)
  • 1 tsp dried mint
  • 1 tsp dried oregano
  • 1/2 teaspoon paprika
  • Kosher salt and freshly ground pepper
  • 1 onion (sliced)
  • 1 pound skirt steak
  • 4 pocketless pitas
  • Greek yogurt for dressing. (optional)

Drizzle olive oil in a medium sized grill. Preheat a grill to medium.

Marinade: Whisk olive oil, garlic, oregano, mint, paprika, 1 tsp salt, and pepper in a large bowl.
Add steak to the bowl and toss.
Grill the steak, for about 4 minutes on each side, until lightly charred. Set aside to rest, about 5 minutes. Meanwhile, grill the pitas until marked, about 1 minute per side.
Slice the steak against the grain. Garnish with parsley.

Serve with yogurt of your choice.
