Greek Herb and Lemon Sauce for Lamb
Ingredients
- 1/2 C. chopped mint
- 3 Tbs. fresh thyme leaves
- 1 C. chopped flat leaf parsley
- 3 Tbs. fresh oregano leaves
- 2 cloves garlic, chopped
- 1 C. chopped onion
- 1/2 tsp. red pepper flakes
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbs. paprika
- 1/4 C. red wine vinegar
- 1/4 C. lemon juice
- 2 tsp. grated lemon rind
- 1/2 C. olive oil
Directions
Place herbs, garlic, onion, pepper flakes, salt, pepper, and paprika in a large bowl and toss to coat. Let rest for 15 minutes. Place in a blender or food processor, and add vinegar, lemon juice and rind, and olive oil. Process until smooth. Pour into a container and place in the refrigerator overnight to allow the flavors to blend. Stir well, and spoon over cooked lamb roast or chops. Or, use to spice up gyros.
