  • 4 zucchini
  • 1 cup diced onion
  • ½ cup diced carrot
  • ½ cup diced red pepper
  • 2 cups diced mushrooms
  • 3 minced garlic cloves
  • 1 jar tomato sauce
  • ½ cup feta cheese
  • 1 cup bread crumbs
  • ½ cup mozzarella cheese

Preheat the oven to 350 degrees. Slice the zucchini lengthwise and scoop out the seeds. Place the seeds and zucchini flesh in a bowl and mix with garlic, onion, carrot, pepper, mushroom, bread crumbs, and feta cheese. Stuff the zucchini shells with the mixture and put the shells on a baking pan. Pour tomato sauce over zucchini and cover the pan with aluminum foil. Bake for 45 minutes. Sprinkle with mozzarella cheese and bake until the cheese melts.
