  • 3 C. romaine lettuce, chopped
  • 1/2 C. grape tomatoes
  • 1/2 C. cucumber, diced
  • 1/4 C. yellow pepper, diced
  • 1/4 C. red onion, diced
  • 1/3 C. couscous, cooked
  • 1 Tbs. Feta cheese, crumbled
  • 6 Kalamata olives
  • 1 (3 oz.) pkg. water-packed tuna
  • 2 tsp. oil
  • 2 tsp. red wine vinegar
  • 1/2 tsp. lemon juice
  • 1 tsp. fresh mint, chopped
  • 1 tsp. fresh oregano, chopped
  • Salt and pepper, to taste

In a bowl, combine the prepared lettuce, tomatoes, cucumber, yellow pepper, red onion, and couscous. Sprinkle with Feta cheese and olives. Top with tuna. In another bowl, combine the oil, vinegar, lemon juice, mint, oregano, salt, and pepper. Whisk and pour on top of salad.
