Greek Shrimp Pasta Salad

This is a colorful dish that is great as a main course or just a side dish.

Ingredients

  • 3/4 lb. fresh tomatoes, chopped
  • 1 large red or green bell pepper, chopped
  • 1/4 lb. feta cheese, crumbled
  • 2 Tbs. wine or herb vinegar
  • 1 Tbs. fresh, minced thyme
  • 6 green onions, chopped
  • 1/2 C. olive oil
  • 3 garlic cloves, minced
  • 1/4 C. fresh lemon juice
  • 3/4 lb. small or medium pasta shells, cooked
  • 3/4 lb. cooked salad shrimp

Directions

Mix the first 10 ingredients in large bowl. Add the cooked pasta and the shrimp. Toss to blend. Season to taste with salt and pepper.

Yield: 6 servings
