  • 3/4 lb. lean pork
  • 1 lemon, juiced
  • 1 Tbs. olive oil
  • 1 garlic clove, chopped
  • 1 tsp. thyme, chopped
  • 1 tsp. coriander seed, crushed
  • 1 onion, quartered
  • 1 green pepper, quartered
  • 1 tomato, sliced
  • Salt and pepper to taste

Make a marinade in a large bowl by mixing lemon juice, oil, garlic, thyme, coriander seeds, salt and pepper. Cut pork into 3/4-inch cubes and add to marinade. Mix thoroughly and refrigerate for 2 hours. Preheat broiler. Place meat and vegetables on baking dish. Cook for 10 to 15 minutes or until pork is cooked through. Serve on pita breads.
