One bite of these sweet bell peppers stuffed with ground beef, spinach, and couscous will instantly transport you to the Grecian isles. If you'd like to add more Greek-style flavor to this dish, substitute the ground beef with minced lamb.

Preheat the oven to 350 degrees. In a large bowl, mix together the beef, spinach, zucchini, onion, couscous, egg, oregano, salt, and pepper. Place the bell peppers in a 9x13" baking dish and fill each pepper with the meat mixture. Sprinkle the olives and white cheddar over the stuffed peppers. Cover the dish with foil and bake for 30 minutes. Uncover and continue baking for 20-25 minutes until the meat is completely cooked and a thermometer stuffed into the center of a pepper registers 160 degrees.
