Greek Stuffed Bell Peppers
Preheat the oven to 350 degrees. In a large bowl, mix together the beef, spinach, zucchini, onion, couscous, egg, oregano, salt, and pepper. Place the bell peppers in a 9x13" baking dish and fill each pepper with the meat mixture. Sprinkle the olives and white cheddar over the stuffed peppers. Cover the dish with foil and bake for 30 minutes. Uncover and continue baking for 20-25 minutes until the meat is completely cooked and a thermometer stuffed into the center of a pepper registers 160 degrees.
