Bursting with Mediterranean flavors, this recipe is a great way to use up any chicken leftovers! It also incorporates a variety of colorful vegetables, which makes it easier to get your kids to eat them.

  • 2 C. Greek yogurt
  • 1 C. peeled, seeded and diced cucumber
  • 2 Tbs. chopped fresh dill
  • 2 Tbs. lemon juice
  • 1 tsp. garlic powder
  • 1/4 tsp. salt
  • 6 oz. grilled chicken cut into stripes
  • 4 (6-inch) whole wheat pitas
  • 1 medium tomato, chopped
  • 1/4 C. sliced red onion
  • 1/4 C. crumbled Feta cheese

To make the sauce, combine the first six ingredients and refrigerate, until ready to serve. To assemble the “pockets”, microwave pitas for about 30 seconds, before spreading on top a spoon of yogurt sauce, tomato slices, onions and Feta cheese. Serve with additional sauce on the side and grilled vegetables such as corn on the cob and zucchini.
