Greek Veggies on the Grill
Ingredients
- 1 C. eggplant, cubed
- 1 red pepper, seeded and chopped
- 1 green pepper, seeded and chopped
- 1 small white onion, sliced
- 10 button mushrooms, sliced
- 2 cloves garlic, minced
- 2 Tbs. olive oil
- 1 Tbs. lemon juice
- 1 small tomato, chopped
- 1 small cucumber, peeled and chopped
Directions
Place eggplant, peppers, and onion in a grill pan on the grill. Grill for 3 minutes, then add mushrooms and garlic. Sprinkle olive oil and lemon juice over the vegetables. Continue grilling until all veggies are tender-crisp. Serve in a bowl with the tomato and cucumber.
