Greek Yogurt and Homemade Lemon Marmalade Parfait

- 4 lemons
- 2 Tbs. lemon juice
- 1 C. sugar
- 4 C. water
- 1 (32 oz.) container of plain Greek yogurt
- ½ C. granola
Zest 3 lemons into a medium saucepan. Slice the fourth lemons into thin circles. Add one cup of water and bring to a boil. Once it reaches a roaring boil, reduce heat and allow 10 minutes to simmer. Strain the water off the lemons and zest.
Return to pot and add another cup of water; cover. Simmer again for 10 minutes. Strain again and return the lemon zest and lemons back into the pot.
Mix in sugar, lemon juice and 2 cups of water. Heat to a boil and reduce heat to medium/low. Allow to simmer for 30-45 minutes until it begins to thicken. Pour into a jar or container and refrigerate.
Scoop out about a cup of Greek yogurt and place in a bowl. Pour desired amount of lemon jam on top of yogurt. Sprinkle granola on top and serve.
