Greek Yogurt Breakfast Quiche
Serving Size / Yield
- 8 slices lean turkey bacon
- 4 whole eggs
- 4 egg whites
- 1 tsp. McCormick Italian Seasoning
- 1/4 C. nonfat Voskos Greek Yogurt
- 1/3 C. thinly sliced yellow onion
- 3 sm. russet potatoes
- 1/2 tsp. ground sea salt
- 1/4 tsp. ground black pepper
Prick and microwave potatoes for 5 minutes or until done.
Cook bacon in large pan until crispy. Once removed blot bacon with paper towels to remove excess grease.
Grill onions in bacon grease until browned. Peel potatoes, slice, and add to pan with onions.
Cut turkey bacon into thin slices and add to pan.
Whisk remaining ingredients in a bowl. Pour over turkey, potatoes, and onions. Reduce heat to medium-low and cover. Let set for up to 10 minutes.
