Dense, chewy and slightly sweet, this bread is perfect for breakfast or brunch, served with peanut butter, honey, jam or butter. It yields 12 thick slices. Each slice contains about 200 calories, 5 grams of protein and 3 grams of fiber.

  • 1 C. all purpose flour
  • 2 C. whole wheat flour
  • ½ C. packed brown sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 C. Voskos Greek Yogurt, plain low fat
  • ½ C. reduced fat (2%) milk
  • ½ C. honey

Preheat oven to 325°F.

Sift the flour with the sugar and salt into a large bowl.

Dissolve the baking soda in a mixture of the yogurt and milk, then add the honey and mix well.

Add liquid ingredients to dry ingredients and stir until a dough is formed.

Pour into a greased 9 x 5 inch loaf pan, leaving the dry crumbly bits in the bowl, and bake until the bread tests done, about 1 ½ hours, loosely covering with foil after the first hour.

Allow to cool in pan for about 10 minutes, then transfer to a wire rack and allow to cool about 20 more minutes. Serve warm, or at room temperature.

Slice and freeze any remaining leftovers. Toasted and buttered, this bread is absolutely delicious!
