Green Bean and Ham Soup
Ingredients
- 4 C. fresh green beans, cut into 1" pieces
- 3 C. potatoes, peeled and cut into 1" pieces
- 2 C. ham, cooked and cubed
- 1 C. chopped onion
- 4 C. water
- 1 Tbs. oil
- 1/4 C. all-purpose flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 C. milk, Half & Half or light cream
Directions
Place beans, potatoes, ham, onion, water, and salt in pressure cooker. Lock lid into place. Over high heat, bring to pressure, reduce heat just enough to maintain pressure, cook 5 minutes. Quickly release the pressure. Carefully remove lid. Sift together flour, salt, pepper, milk until smooth. Add to cooker. Cook over medium heat until thickened and bubbly. Cook and stir for 1 minute more.
Yield: 6 servings (10 C.)
