  • 1 lb. green beans, trimmed
  • 1 pinch salt
  • 1/4 C. olive oil
  • 2 Tbs. red wine vinegar
  • 1 sm. garlic clove, minced
  • 1 pinch crushed red pepper
  • 1 celery rib, trimmed and chopped
  • 1/2 C. pitted green olives, chopped

Bring 2 qts. water to a boil in a large saucepan. Add beans and salt to taste. Cook uncovered for 8 minutes or until the beans are tender. Drain the beans and cool them under cold water. Pat them dry. In a large serving bowl, whisk together the oil, vinegar, salt, garlic and red pepper. Add beans and toss well. Add the rest of the ingredients and stir until coated with the dressing. Taste and adjust seasoning. Serve.
