  • 1 lb of potatoes, cooked
  • 1 lb of green beans
  • 2 c. of black olives
  • 1 lb of spinach, chopped
  • 1 tsp of oregano
  • 1 tsp of herbs
  • salt and pepper
  • 1 tbsp of vinegar
  • 1 tbsp of olive oil

In a mixing bowl, combine spinach, black olives, green beans and potatoes. Season with herbs, oregano, salt and pepper. Drizzle olive oil and vinegar on top, stir well. Transfer to serving bowls.
