Green Beans with Almonds and Balsamic Vinegar

Serve this healthy side dish at any get-together. Although it looks fancy, it's simple to prepare!

  • 4 oz. fresh green beans
  • cooking spray
  • 1 shallot, minced
  • 1 1/2 Tbs. balsamic vinegar
  • 1/2 tsp. sliced almonds

Bring a medium saucepan of water to a boil and add beans. Simmer until crisp-tender, about 3 minutes. Drain, rinse under cold water and drain again. Set aside.

Lightly coat a nonstick skillet with cooking spray. Add shallot and saute over low heat for 2 minutes, stirring, until shallot is limp but not brown. Add green beans to skillet and heat over medium heat for 2 minutes, stirring frequently. Pour in vinegar and after about 30 seconds, sprinkle with almonds. Toss to coat evenly. Serve right away.
