  • 8 oz. young green beans, stem ends removed
  • cooking spray
  • 1 scallion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp. fresh chopped tarragon, thyme or 1/4 tsp. dried
  • freshly ground pepper to taste
  • 1 tsp. white wine vinegar

Bring a saucepan of water to a boil and add beans. Simmer until crisp-tender, about 3 minutes. Drain well and return to saucepan. Lightly coat beans with cooking spray. Toss with scallion, garlic, herbs and pepper. Sprinkle with vinegar and serve at once.
