Put a twist on your typical potato salad by smothering its bite-sized pieces in a homemade green goddess dressing. Add some crunch to the creaminess with chopped-up cucumbers plus red and green onions.

  • 1 1/2 lb. Red Potatoes, peeled, boiled, drained, and cubed
  • 1/4 C. Green Onion, green parts only, chopped
  • 1/4 C. Red Onion, chopped
  • 1/2 Medium Cucumber, chopped
  • 1/2 C. Nonfat Plain Greek Yogurt
  • 1/3 C. Buttermilk
  • 1/4 C. Fresh Chives, chopped
  • 1/4 C. Flat-Leaf Parsley, coarsely chopped
  • 1 Tbs. Lemon Juice
  • 1 tsp. Dried Oregano
  • 1 Garlic Clove, chopped
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

In a large bowl, toss together the potatoes, green onion, red onion, and cucumber, and set aside. In a food processor or blender, puree together the yogurt, buttermilk, chives, parsley, lemon juice, oregano, and garlic until smooth. Stir in salt and pepper as needed to taste. Pour at least 3/4 cup of the dressing onto the potato salad and stir to coat, adding more dressing as needed to reach a desired consistency. Cover and refrigerate for at least 30 minutes before serving.
