  • 3-4 boneless chicken breasts, cut into bite-sized pieces
  • 2 Granny Smith apples, diced
  • 1 (4 oz.) can green chilies, drained
  • ¼ C. cilantro, chopped
  • ½ C. mint leaves, finely chopped
  • ¼ C. yogurt
  • ¼ C. ricotta cheese
  • 1 onion, diced
  • 4 cloves garlic, minced
  • ½ tsp. ground ginger
  • ½ tsp. coriander powder
  • 2 T. chili powder
  • ½ tsp. Garam Masala powder
  • Salt and pepper to taste
  • ½ C. water
  • Dash sugar

In a large skillet, heat oil and cook chicken pieces while sautéing onion and garlic until chicken is no longer pink. Season with ginger, coriander, chili powder, Garam Masala, salt, and pepper. Heat briefly and transfer to your crockpot. Using a food processor, blend together apple, green chilies, cilantro, mint, yogurt, and ricotta until smooth. Pour over chicken in crockpot, add in water and sugar, cover, and cook on high for 3 to 4 hours.
