  • 2 teaspoons olive oil
  • ½ cup + 2 tablespoons white wine
  • 6 boneless and skinless chicken breast
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 2 lemons, cut into 6 wedges
  • 2 tomatoes, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon fresh basil, chopped
  • ¾ cup green olives
  • ¼ cup fresh parsley, chopped
  • salt
  • pepper

Heat the oil and 2 tablespoons wine in a large skillet. Add the chicken and cook for 4-6 minutes on each side, or until golden brown. Remove from skillet and set aside. On the same skillet, cook the garlic for 30 seconds and add onion, cooking for an additional 3 minutes. Add all of the contents into a crockpot and add the tomatoes. Add the remainder of the wine, lemon, thyme and basil. Add the chicken and cover, cooking for 2-3 hours on high, or until chicken is no longer pink. Add the olives and parsley and cook for 10 more minutes. In the end, season with salt and pepper and serve.
