Regular rice is spruced up with chicken broth, parsley, and green onions.

  • 4 C. chicken broth
  • 2 C. uncooked rice
  • 1/2 C. chopped fresh parsley
  • 1/2 C. chopped green onions with tops
  • 2 Tbs. butter or margarine

Combine broth and rice in medium saucepan. Bring to a boil and stir. Reduce heat to low and cover. Simmer without stirring, 15 minutes or until rice is tender and liquid is absorbed. DO NOT remove lid during cooking. Remove saucepan from heat; stir in parsley, onions and butter. Cover and keep warm until ready to serve.
