Green Salad with Avocado, Apples, and Baked Tofu

This salad is substantial enough to be a main course and it's perfect for vegetarians.

  • 4 to 6 oz. baked tofu, cut into dice or strips
  • 1 medium red bell pepper, diced
  • 1 medium head dark green lettuce
  • 1 medium-large ripe avocado, diced
  • 2 medium Granny Smith apples, cored and diced
  • juice of 1/2 large lemon
  • any salad dressing

Combine tofu, bell pepper, and lettuce in a bowl.  Toss avocado and apples in lemon juice in another bowl, then add to the salad and toss together.  Moisten with dressing and serve.
