  • 1 C. chopped romaine
  • 1 C. arugula
  • 1 C. baby spinach
  • ½ C. red cabbage
  • ½ C. chopped kale
  • 4 oz. deli ham, chunked
  • 1 (16 oz.) pkg. Sour cream and Onion potato chips
  • Dressing
  • ¼ C. olive oil
  • 2 Tbs. red wine vinegar
  • 2 cloves of garlic
  • 1 lemon, juiced
  • Salt and freshly ground pepper to taste

In a large bowl, toss the greens and ham. In a small bowl, whisk together the dressing ingredients. Toss the salad with the dressing and top with the potato chips.
