Green Tomato Pie
Ingredients
- 2 pastry pie shells uncooked
- 4-5 medium green tomatoes
- 3 Tbs. butter or margarine
- Grated Rind from 1 fresh lemon (save juice also)
- 3 Tbs. flour
- 1 1/2 C. sugar
- 1/2 tsp. nutmeg or pie spice
- 1 1/2 tsp. cinnamon
- 2 Tbs. fresh lemon juice
Directions
Preheat oven to 425. Put green tomatoes into a boiling pot of water on stove for only 5 minutes. Take them out and cool in cold water pull off skins. Cut into thin slices. In a large bowl, combine all dry ingredients and stir well. Fold tomatoes and wet ingredients into the dry mix. Place this into one of the pastry pie shells and drop the butter on top in different places. Cover with the existing pie shell and pinch edges together to close. Cut a few slits in the top of the pie and sprinkle sugar and cinnamon on the top. Put pie on a cookie sheet or pizza pan just in case juices leak out of pie to avoid a messy oven. Bake at 425 for 10 minutes only!!! Turn temperature down to 325 and bake for another 30 min until golden brown. Don’t overcook. Let cool for about 10-15 min. This is best served with vanilla ice cream.
